Almost three years ago we made the single largest change to our time-honoured recipes in over a decade - we began using Cornish Sea Salt in our cheesemaking. This week is National Salt Awareness Week, so we will be delving into the importance of salt in our cheesemaking and giving away some wonderful prizes.
NATIONAL SALT AWARENESS WEEK
National Salt Awareness Week is a week that encourages the public to cut down on their salt intake and be aware of hidden salt in their favourite foods. Salt has always had plenty of bad press, but recent studies show that table salts and salt found in processed foods are the worse kind of salt, stripped of all their natural goodness leaving just Sodium Chloride and the chemical residues of the process.
Table salts remove all the minerals and trace elements in them like magnesium, calcium and potassium, which all occur naturally in sea salt, and actually help to regulate our body fluids. The mineral profile of natural sea salts are in balance with the body’s own natural salinity - and we believe the taste is far superior too.
Sea Salt in Cheesemaking
For us, there is industrial table salt, then there is natural sea salt - we see the two as incomparable. Cornish Sea Salt has a unique mineral-rich flavour that has added a new complexity of flavour to our expertly crafted clothbound cheddar. Just like in cooking, the addition of Cornish Sea Salt into the cheesemaking process has added a lovely brightness and you really notice an extra zing at the end.
