Nothing beats sitting in the summer sunshine with friends enjoying a refreshing glass of wine and some cheese. Both are delicious on their own, but when you pair the two, magic can happen.
Whilst we are making award-winning cheese and butter in our beautiful corner of Devon, on the other side of the county, nestled in the Axe Valley, Lyme Bay Winery are producing fine English wine, cider, liqueur and mead.
A warm summer day is a perfect excuse to open a chilled bottle of white and enjoy with a generous wedge of Quicke's Clothbound Cheddar. Below we share the perfect summer wine and cheese pairing for you to enjoy under the sunshine...
Lyme Bay Chardonnay 2016
Lyme Bay Winery's Chardonnay is a beautifully refreshing, well-rounded dry wine, with subtle buttery and toffee flavours with aromas of peach turnover and honey. The 2016 vintage was defined by an incredibly warm and dry autumn, which allowed the grapes to be hand-picked at optimum ripeness. After fermentation, the wine was transferred to barrels of French oak, along with the lees (dried yeast), for 11 months of ageing and gentle stirring, producing a smooth, creamy texture and a beautiful pale gold colour.
Quicke's Buttery Clothbound Cheddar
Our youngest cheddar is a mouth-watering match for Lyme Bay's Chardonnay. Our expert cheesemakers handcraft our Buttery Clothbound Cheddar using heritage starters, before it is clothbound and stored in the cool quiet of our cheese cellars where it matures naturally for three months. Capturing the intensely buttery flavour found at this early stage of maturing; it’s a perfect expression of our rich creamy Devonshire milk.
