Inspired by the innovative cuisine of Michelin‑starred Restaurant Schattbuch in Amtzell, Germany, Bavarian cheesemaker Albert Kraus collaborated closely with the restaurant’s culinary team to craft a cheese that unites traditional Alpine craftsmanship with modern gastronomic creativity.
The result is a semi-hard Allgäu-style cheese, made from cow's milk and coated with five carefully selected varieties of pepper, chosen by the Schattbuch chefs to deliver depth, warmth, and balance.
Tasting notes - Buttery and full-bodied with warm pepper spice, floral notes, and a hint of smokiness. The creamy, semi-firm texture balances richness with a lively, aromatic finish.

Since most of our products are perishable, all parcels must be signed for. If you think you might be out when the postman calls, please include full delivery instructions such as ‘leave in the shed/ porch/ with a neighbour’. We're very proud of our handmade artisan cheeses. In the unlikely event of an order falling short of your expectations in any way, please get in touch to discuss a refund.
