At Quicke’s, we’re so proud of what we do because we know it’s the hard work of every member of our team – our cows included – that goes into making our world-class clothbound cheeses.
At Quicke's, we understand that great cheesemaking is an art. We've been nurturing the family's land in Newton St Cyres for 14 generations, crafting the very finest flavours from our idyllic corner of Devon. Each truckle is handmade, clothbound and slowly matured in the cool quiet of our stores and then shipped all over the world. From our classic 2-year-old Vintage Cheddar to our delightfully different Goat's Cheese, our range is a balance of heritage and innovation. Every day we are inspired by the Quicke family motto: 'Petit Ardua Virtus - strength seeks challenges.'
Grass
Grass is cows' favourite food, and it grows well in the lush fields of Devon. We use a Kiwi-Grazing system, measuring every paddock each week with a rising plate meter — so we always know how much grass is there, and how much of its goodness will make its way into the milk, and then the cheese.

Cows
World-class cheese requires world-class milk. Rather than chasing yield, our herd — a deliberate blend of ten dairy breeds we call the Quicke's cow — is bred for quality, with long days out at grass and proper maternity care for every calving cow.

Cheese Make
With over a century's experience between them, our cheesemakers understand that what they do is an art. Using all their senses, they individually craft every cheese by hand — from a heritage starter culture unchanged for decades, through hand-cheddaring, to cloth-binding each truckle for its long maturation.

Grading
Creating consistently excellent cheese is a science as well as an art. Every month, all our cheeses are meticulously graded by an external assessor using a century-old scheme — around 100 cheeses tasted in a single sitting for flavour, aroma, body, texture, finish and colour.
