Papillons sipping gin, their signature Gin, is matured in an aged Pedro Ximenez sherry cask and named Mariposa for the sweet and rich Spanish PX sherry.
The complex, smooth and rounded flavour of the gin with notes of butterscotch, vanilla, honey and creme brûlée means that it’s a versatile gin for pairing with Quicke’s cheese as each of these elements brings out or compliments the notes within the cheese. The smoothness of the Mariposa cuts through the complex flavours of the Extra Mature Clothbound Cheddar and helps emphasises the caramel creamy notes. When paired with the Buttery Clothbound Cheddar, Quicke’s youngest cheese of 3 months it helps to emphasise the burnt caramel/ crème brûlée notes within the gin. Goat's Milk Clothbound Cheese is the winning pair with the smoothness of the gin combined with the goats makes you feel like you are consuming a delicious desert, nutty and creamy and then honey custard afternotes really compliment each other.
