Top Tier:  BIX Handmade by Nettlebed  Dairy in Oxfordshire,  this is based on French cheeses like Chaource and Brillat Savarin made using organic extra double cream milk from the Nettlebed farm, the cheese is matured for 3 weeks to create a bloomy white rind and a rich indulgent centre.

Fourth Tier: EVE Handmade in Somerset by White Lake who makes the most incredible soft cheeses. Eve is a unique soft Goat's Cheese, made using 100% goats milk, this soft cheese is washed in Somerset cider brandy, adding a wonderful depth of flavour. The cheese is then wrapped in a vine leaf and matured. The perfect tier to a wedding cake, adding a bit of colour from the leaves and creating a wonderful nutty finish. 

Third Tier: TUNWORTH is made by Hampshire Cheese co. in Hampshire by Stacey Hodges, using local milk. A take on Camembert, unlike Normandy camemberts no butterfat is skimmed off the milk, producing a deeply creamy cheese with mushroom vegetal notes. 

Second Tier: NETTLE YARG  Handmade in Cornwall, by Lynher Dairies,  Cornish Yarg is made with aromatic hand-picked spring nettles from the Cornish woodlands, This is a semi-hard Cornish cheese made using grass-rich Cornish milk. It has an unmistakable colour with its nettle wrap. Matured for five weeks, it takes on a fresh mushroomy taste with an irresistible crumble in the core. Deliciously different.

First Tier: COLSTON BASSETT STILTON Handmade in Nottingham-shire by Colstan Bassett Creamery. Stilton’s origins date back to the 18th century when it was eaten at The Bell Inn, Stilton. Now a protected cheese, Stilton can only be made in the counties of Nottinghamshire, Derbyshire and Leicestershire. Colston Bassett Stilton is often considered to be the best. Little has changed since they started making cheese in 1913, and they still use the milk from four of the original local farms that set up the co-operative in the beginning. The reputation of the dairy has gone from strength to strength, and it is now famous for making Stilton that is velvety and smooth, with a full, well-balanced, sweet and ‘mineral-y’ flavour. This Stilton is creamy buttery with the characteristic blue vein of a Stilton. It has a balanced gentler flavour than some Stilton.

Base Tier: MATURE CHEDDAR TRUCKLE Handcrafted on the Quicke's, Devon estate using milk from our grass-fed  Quicke's breed cows, clothbound and naturally matured, typically for 6 months. Creamy and buttery with hints of brothy to grassy to caramel notes.

Storage

Each cheese will come individually wrapped. Please ensure your cheeses are stored in a refrigerator at 5 degrees before the event. On the day of the event unwrap your cheese and assemble and decorate. The cheeses will be fine left somewhere cool for 4-5 hours. Please allow a minimum of 2 hours out of the fridge before serving to all the larger cheeses to come up to room temperature.
