Cheddar in a different league
It’s almost odd to call this cheddar in the sense that cheddar has connotations of being quite ordinary, certainly cheap and cheerful. But Quicke’s cheddar is extraordinary. Complex, intense flavour that lingers. All the stuff about creamy and sweet and tangy and salty etc…all true.
In terms of care, I didn’t follow the guidance on opening, which is to remove the cloth and wrap in grease proof paper. I cut straight through in half, through the cloth. Then I cut a wedge off to eat, taking the cloth off and wrapping in clingfilm. To store the rest I put clingfilm on all the cut faces (but not on the cloth), making sure there were no air gaps on these faces, and kept in the fridge. In this way it lasted us something like two months, at the rate we ate it, but I’m sure it could last even longer.
